Do you have an interest in hospitality and catering then this exciting fully funded course may be for you? 

The Certificate in Occupational Studies for the Workplace Level 1 is a mixture of theory and practical sessions that will help you improve your skills and enhance your employability.  

The course covers the following topics: 

  • An introduction to the catering and hospitality industry  
  • Customer service in the hospitality industry 
  • Basic food preparation and cooking 
  • Food hygiene

Permaculture is a design approach based on understandings of how nature works. The word permaculture is originally from ‘permanent agriculture,’ then more recently ‘permanent culture‘.

Here at the Larder Food Academy we provide a range of courses to groups within our Preston community.

We are proud to work with the Preston Syrian Refugee Project, the Lancashire Refugee Integration Team and Edith Rigby House providing Food Hygiene training to help support their training and accredited skills to help towards gaining employment.

National College for Further Education

Award in Occupational Studies for the Workplace Level 1

A mixture of theory and practical sessions that will help you improve your skills and enhance your employability

The course covers the following topics: 

  • Basic Food Preparation and Cooking
  • Customer Service in the Hospitality Industry
  • Introduction to the Catering and Hospitality Industry
  • Maintenance of a safe, hygienic and secure working environment
  • Improving own Learning and Performance

Total qualification time 130 hours: Guided Hours Learning – 88 hours; Self Study – 42 hours

Award in Employability Skills Level 1

The objectives of this qualifications are to help learners to:

  • Understanding mindset
  • Understanding motivation
  • Setting yourself targets
  • Managing your time
  • How to keep improving
  • Developing assertiveness

Total qualification time 60 hours: Guided Hours Learning – 36 hours; Self Study – 24 hours

Certificate in Hospitality & Catering Principles – Food Production & Cooking Level 2

The course covers the following topics: 

  • Safe, Hygienic and Secure working environment in Hospitality
  • Effective Teamwork
  • Food Safety in Catering
  • Principles of producing vegetable dishes.
  • Principles of producing poultry dishes.
  • Principles of producing bread.
  • Principles of producing cakes.
  • Principles of completing kitchen documentation.
  • Principles of the use & maintenance of kitchen resources
  • Principles of preparing meals for distribution.
  • Principles of providing a counter and takeaway service.

Total Qualification Time 160 hours: Guided Hours Learning – 98 hours; Self Study – 62 hours

Food Champions

Our Food Champions 8 week programme trains people to deliver cookery sessions & healthy eating workshops to promote healthy and sustainable food to the public, build community food knowledge, skills and resources.  The course covers basic nutrition and cooking skills, supporting participants to encourage others to cook and eat better. All you need is an interest in cooking and health and a desire to share your enthusiasm with other people. We are proud to have trained more than 20 Food Champions so far.

Level 2 Food Hygiene Certificate

This is a compulsory requirement for people who are working in the catering industry. This is delivered over 7 hours, and includes the most up to date advice for catering establishments.

Kids In The Kitchen

At this time, our Kids In The Kitchen courses have moved from being face-to-face to being delivered online. Over the Summer 2020 we provided almost 100 families with recipes, ingredients kits and online videos to cook together. Please click on the link for more information KIDS IN THE KITCHEN

Range of Bespoke Cooking/Food/Health related courses & workshops

These can be tailored to the needs of the group. We have delivered courses on budgeting, cooking for health and more. These courses have previously been delivered by the Larder in a variety of locations including schools and housing associations for parents & children.
